* gnu/packages/fontutils.scm (python-defcon-bootstrap): Update to 0.11.0.
[source]: Switch to git-fetch.
[build-system]: Switch to pyproject-build-system.
[arguments]<#:phases>: Add phase 'set-version.
[native-inputs]: Add python-setuptools. Remove python-pytest-runner.
